In this month’s Ask the Expert, we catch up with Ed Hawkes, co-owner of White Rabbit Chocolatiers. We discuss the source of their chocolate, and coffee, in a little more detail, and find out how knowing where your chocolate comes from can have a big - and positive - impact!

Where does your chocolate come from?

The chocolate we use is bought from cocoa farm cooperatives, mainly in South America, where the communities there put much care into their farming and sustainable practices.

What are the advantages of using these cooperatives?

Using cocoa farm cooperatives guarantees beans with the best quality and flavour. The cooperatives work together and set the price of the beans they sell at a sustainable rate. Our chocolate is traceable, meaning we can go back to the source to ensure ethical and sustainable practices are used over the whole process.

Does buying from cooperatives increase the price?

Using beans from cocoa farm cooperatives does make our chocolate more expensive, but we believe the additional cost it is well worth it. Knowing that the product you are eating or drinking is well-sourced means you really can enjoy your quality, sustainable and ethical treat!

And your coffee?

Our coffee is sourced from Dark Woods, the speciality coffee roastery in huddersfield, and the same applies to our coffee as applies to the chocolate we use. In order to get the best and most consistent beans for the complex coffee blend we use (‘Crow Tree’), beans from single and traceable origins must be purchased making this form of speciality coffee very ethical.
