BRAZILIAN CHEF CLAUDIO BRINGS HIS SKILLS TO CHAMAS

Hailing from Paraná in Southern Brazil, Claudio has been brought up enjoying the centuries-old way of cooking around churrasco campfires in the tradition of the South American horsemen (gauchos) when large skewers of meat would be spit-roasted and passed around the gauchos who would slice a piece off each until they were full. This is the basis for Chamas in Wednesday Market, which has taken the town by storm, rapidly rising to No 1 out of 115 local restaurants on Trip Advisor.

Claudio’s love of the rodizio - the ‘all-you-can-eat’ style of continuous service of meats - has brought him to help Chamas owners, Ali and Nicola Tecke, ignite the flames at Chamas in Beverley. Chamas means ‘flames’ in Portuguese, echoing the flames of the campfires.

At Chamas, the skewers are spit-roasted over special grills which ensure the flavour of the meats are just as they would be when cooked over open campfires.

Coming from Paraná, the town which has the largest annual meat festival in Brazil, where thousands of people gather every year to share in 300 ribs (16 tonnes) of meat cooked around a huge, open-pit barbecue, Claudio is very discerning! Which means diners can be assured the meat at Chamas is cooked to perfection.

Alan Lavender, former Head Chef at the prime Minister’s country residence, Chequers, and an experienced South American traveler, says the cuts of meat at Chamas are ‘some of the best he has ever had.’ Claudio said; “Capturing the spirit of Brazil is unstoppable.
